  • 1/2 cup unsalted butter melted + 2 tbsp for greasing the pan
  • 5 oz whole milk yogurt
  • 1 cup sugar
  • 2 ripe bananas
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup walnuts finely chopped
  • 1/4 cup poppy seeds


  1. Preheat oven to 350 degrees F. Grease a loaf pan with two tablespoons of butter and set aside.

  2. In a medium bowl, stir in dry ingredients: flour, baking soda, baking powder, and salt.

  3. In a high speed mixer with the paddle attachment, cream together the butter and sugar, add the yogurt and whisk until well mixed.

  4. Add in the egg, vanilla extract and mashed bananas, mix until smooth.

  5. Fold in the dry ingredients into the mixture.

  6. Using a spatula, carefully fold in the finely chopped walnuts and poppy seeds.

  7. Bake for 50-60 minutes or until a wood tester inserted into the center comes out with only a few moist crumbs attached.

  8. Transfer the pan to a wire rack, and let the bread cool in the pan for 15 minutes before transfering from the pan onto the wire rack to cool completely.
