Apple Cinnamon Pork Chops

Ingredients

  • 4 tablespoons butter divided
  • 2 bone-in pork chops
  • 3 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 4 medium tart apples chopped

Mashed Sweet Potatoes:

  • 6 sweet potatoes peeled and cubed
  • 3/4 cup heavy cream
  • 4 tablespoons butter
  • 1 tablespoon brown sugar
  • 1/2 teaspoon cinnamon
  • salt

Garnish:

  • Fresh rosemary

Instructions

  1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender, 20 to 30 minutes.
  2. In the meantime, in a small bowl, mix together salt, 1 tablespoon brown sugar and 1 teaspoon black pepper. Season the pork chops with the mixture and set aside.
  3. In a large heavy skillet, heat 2 tablespoons of butter over medium heat. Add seasoned pork chops and cook 4-5 minutes on each side.
  4. Using tongs, remove the pork chops and set aside, keep warm.
  5. Add to the skillet the remaining 2 tablespoons of butter, chopped apples, 2 tablespoons brown sugar, cinnamon and nutmeg.
  6. Cook and stir until apples are tender, about 7 - 10 minutes.

Mashed Sweet Potatoes:

  1. Once the potatoes are done, with an electric mixer on low, blend potatoes, slowly adding cream, about 1/2 a cup at a time. Use more or less to achieve desired texture. Add butter, brown sugar, cinnamon and salt to taste. Blend until smooth.
  2. Serve the pork chops over sweet potatoes, topped with apples.
  3. Garnish with fresh rosemary.
