For this recipe you need:-Grated zucchini-Fresh raspberries-Large eggs-Granulated white sugar-Lemon zest-Lemon juice-All-purpose flour-Ricotta cheese-Baking powder-Vanilla extract
STEP 1
First, preheat oven to 350 degrees F and beat sugar and butter in a large bowl until pale and creamy. Then, add eggs one at a time. Beat well after each one.

Now add lemon zest, juice, vanilla, and ricotta, beating for another minute. Then, add the dry ingredients until it is just combined.

Next, add the grated zucchini and fold them in with a rubber spatula. After, fold in the raspberries gently and pour the batter into a prepared bundt pan.

Bake for 50 to 55 minutes and then turn it out onto a wire rack to cool completely. Sprinkle with powdered sugar and add fresh raspberries before serving.
