Zucchini Raspberry Cake

Here's What You Need

For this recipe you need: -Grated zucchini -Fresh raspberries -Large eggs -Granulated white sugar -Lemon zest -Lemon juice -All-purpose flour -Ricotta cheese -Baking powder -Vanilla extract

STEP 1

First, preheat oven to 350 degrees F and beat sugar and butter in a large bowl until pale and creamy. Then, add eggs one at a time. Beat well after each one.

STEP 2

Now add lemon zest, juice, vanilla, and ricotta, beating for another minute. Then, add the dry ingredients until it is just combined.

STEP 3

Next, add the grated zucchini and fold them in with a rubber spatula. After, fold in the raspberries gently and pour the batter into a prepared bundt pan.

STEP 4

Bake for 50 to 55 minutes and then turn it out onto a wire rack to cool completely. Sprinkle with powdered sugar and add fresh raspberries before serving.
