This delightful fall salad mixes sweet potatoes, bacon, pineapples, cranberries, pomegranates, pecans, and feta cheese. Then, it is coated with creamy curry dressing. 

Here's What You Need

For this recipe you need: -Peeled sweet potatoes -Crumbled feta -Bacon -Chopped pecans -Pomegranate arils -Dried cranberries -Pineapple tidbits -Olive oil For the dressing: -Apple cider vinegar -Orange zest -Medium curry powder -Orange juice -Mayonnaise

STEP 1

First, preheat oven to 375 F and place diced potatoes on a baking sheet. Toss with oil, salt, and pepper. Then, roast for 25 to 30 minutes, until tender. 

STEP 2

Now, place bacon on a baking sheet with foil and bake for 12 to 20 minutes. Place the pecans on another baking sheet and roast for 5 minutes. 

STEP 3

On a large serving plate, add potatoes, cranberries, pecans, pineapples, bacon, arugula, half the feta and half the pomegranate arils.

STEP 4

Last, whisk all of the dressing ingredients until combined. Drizzle it on the salad and add the rest of the cheese and pomegranate arils. Toss before serving.
