Strawberry Pretzel Salad

Want something different? This salad has a creamy filling of mascarpone and cream cheese sandwiched between pretzel crust and light strawberry topping.  

Here's What You Need

To make the strawberry topping: -Strawberry Jello -Fresh strawberries -Lemon juice -Lemon zest -Boiling water For the crust: -Crushed salted pretzels -Unsalted butter -White granulated sugar For the filling: -Whipped cream -Mascarpone cheese -Cream cheese -White granulated sugar

STEP 1

First, preheat oven to 350 degrees F. Then, mix the Jello with boiling water and stir until dissolved. Set aside to cool. 

STEP 2

Now, put the pretzels in a baggie and crush them with a rolling pin. Then, melt the butter and sugar in a saucepan on medium heat. 

Step 3

After, mix in the crushed pretzels and stir well. Then, spoon them into a 13x9 dish. Press into an even layer and bake for 10 minutes. 

Step 4

Meanwhile, beat both cheeses and 1/2 cup sugar in a large bowl on medium high until fluffy. Then, fold in the whipped cream. Gently spread on top of pretzel crust. 

Step 5

Chill for 30 to 60 minutes. Stir the strawberries into the Jello and mix in the lemon juice and zest. Pour Jello on top of the whipped cream and chill for 4 hours before serving with fresh strawberries.
