STEP 1
First, mix the water and strawberry nectar in a small bowl and sprinkle the gelatin on top of it. Mix and set aside for 5 minutes until it blooms.

Chop and hull 1 1/2 pounds of strawberries, put them in a bowl, and sprinkle with 4 tablespoons of sugar. Let it sit for 5 to 10 minutes.

Next, add the strawberries to a food processor or high-speed blender and pulse a few times until the mixture is smooth.

Next, mix the whipping cream, vanilla, lemon juice, and powdered sugar in a large bowl using a hand mixer. Continue to whip until stiff peaks form.

Melt gelatin in the microwave for about 30 seconds. Pour it into the pureed strawberries, stir well, and gently fold in the whipped cream.

Chop and hull the remaining strawberries and sprinkle with 3-4 tablespoons of sugar. Mix and let stand for 10 minutes.

Put some strawberries in the bottom of each glass and top with mousse mixture. Chill for four hours or until it is set. Garnish with the remaining berries and whipped cream.
