For the strawberry cake: -All-purpose flour -Strawberry puree -Vanilla extract -Granulated sugar -Unsalted butter -Greek yogurt -Eggs -Baking soda -Baking powder -Pink gel food coloring

STEP 1

First, line the bottom of a springform pan with parchment and spray the sides with cooking spray. Now, beat the cream cheese on low for five minutes. Then, add the cornstarch and sugar, beating on low until combined. 

STEP 2

Turn up the speed to medium and let it mix for 2 to 3 minutes. Turn the mixer to low and add the eggs, one at a time. Add the vanilla and scrape the sides and bottom of the bowl before whisking for another 2 minutes.

Then, add the whipping cream and mix for another 2 to 3 minutes on medium speed. After, pour into prepared pan and tap to release air bubbles. Bake for 10 minutes before turning the heat down to 200.

Bake for another 55 to 60 minutes until the sides are set and the center is slightly jiggly. Turn the oven off and let it cool for 15 minutes before moving it to a wire rack. Cool for 2 hours on the rack before chilling overnight.

To make the strawberry puree, boil strawberries, water, Jell-0, and sugar in a small saucepan for 2 to 3 minutes until the strawberries are soft. Pour into a mixer and puree before setting it aside.

Next, put parchment in two 8-inch cake pans and set aside. Mix the dry cake ingredients until it is combined. Then, add the butter and mix on low speed until it is incorporated. 

STEP 7

In a medium bowl, whisk strawberry puree, vanilla, eggs, and sour cream until combined. Then, pour this mixture into the flour mixture and beat on medium low until combined. Add pink food coloring if desired. 

STEP 8

After, pour half of the batter into each cake pan and tap before baking for 20 to 25 minutes or until they pass the toothpick test. Let the cakes cool for 10 minutes before moving them to a wire rack to finish cooling.

STEP 9

To make the frosting, cream the butter and cream cheese for 2 to 3 minutes until completely mixed. Then, add the whipping cream and beat on low, slowly increasing speed to high until it is light and fluffy. Chill for at least 30 minutes. 

STEP 10

Make the strawberry crunch by pulsing the cookies in a food processor until they are crumbs. Separate into two bowls and add the strawberry Jell-O and whipped cream to one of the bowls. Mix well. Then combine the two bowls, mixing thoroughly.

Next, place one strawberry cake face down on a cake stand. Top with 3/4 of the frosting. Remove the ring from the cheesecake and flip it onto the frosted cake. Remove the parchment paper. 

STEP 12

Cover the cake with the rest of the frosting before pressing the strawberry crunch onto the sides of the cake. After, sprinkle them on top and press them into the cake. Chill for 4 hours before garnishing with whipped cream and strawberries.
