For the strawberry topping: -Fresh sliced strawberries -White granulated sugar -Lemon juice -Cornstarch -Water For the cheesecake filling: -Whipped topping -Vanilla extract -Plain or vanilla Greek yogurt -Powdered sugar -Cream cheese For serving: -Whipped cream

STEP 1

First, heat lemon juice, sugar, and strawberries on the stove. Then, stir in the cornstarch slurry until dissolved. Boil for 5 minutes and let it cool.

STEP 2

Now, mix wet ingredients in one bowl and dry ingredients in another. Add flour mixture to the wet ingredients a little at a time, stirring with each addition.

STEP 3

Next, stir in the lemon zest and chopped strawberries they are all completely combined.

STEP 4

Then, heat a nonstick skillet and pour 1/4 cup of batter in the pan. When bubbles form, flip it over and cook until golden. Continue with the remaining batter.

STEP 5

After, mix up the cheesecake filling and assemble the pancakes with a layer of filling between each one. 

STEP 6

Finally, top the last pancake with a big dollop of strawberry sauce. Then, serve with a scoop of whipped cream on top.
