For this recipe you need: -Whole chicken cut up -All-purpose flour -Oil for frying -Onion powder -Garlic powder -Kosher salt For the marinade: -Large egg -Hot sauce -Pickle brine -Buttermilk

For the sauce: -Butter -Lard -Cayenne pepper -Brown sugar -Garlic powder -Smoked paprika -Kosher salt -Freshly ground black pepper

STEP 1

First, whisk the buttermilk, pickle brine, hot sauce, and egg in a large bowl until combined. 

STEP 2

Now, add the chicken pieces and toss to coat. Cover with plastic wrap and chill for two to four hours. 

STEP 3

Remove chicken and blot with paper towels. Then, toss in flour mixture before dipping into the marinade again. Coat in flour mixture again and let dry for 20 minutes. 

STEP 4

In the meantime, mix sauce ingredients in a pot and heat until fully melted and combined. 

STEP 5 

Cook chicken in hot oil until crispy and the internal temperature is 160F. Then, brush with sauce and serve with your favorite dips.
