Smashed Chickpea Salad

You will not find any lettuce or tomato in this salad but you will find a lot of flavor with dill, mint, basil, capers, and lots of other flavorings mixed with the chickpeas and red wine vinegar. 

Here's What You Need

You will need these ingredients for this recipe: -Canned chickpeas -Avocados -Chopped red onion -Finely chopped celery -Chopped green onions -Red wine vinegar -Capers -Olive oil -Lemon juice -Chopped bell pepper -Chopped fresh basil -Chopped fresh mint -Chopped fresh parsley -Chopped fresh dill -Kosher salt -Freshly ground black pepper

STEP 1

To begin, slice the avocados in half lengthwise. Then remove the seed and scoop out the flesh, putting it all in a large mixing bowl. 

STEP 2

Then, rinse and drain the chickpeas in cold water. Make sure you get rid of all the excess water. Add the chickpeas to the bowl with your avocados and mash them all up together. 

Step 3

Now, chop the onions, peppers, celery, and herbs before adding them to the bowl. Mix well, add the rest of the ingredients, and season before serving.
