For this recipe you need: -Peeled sweet potatoes -Freshly grated parmesan cheese -Freshly grated cheddar cheese -All-purpose flour -Heavy whipping cream -Whole milk -Minced garlic -Unsalted butter -Cinnamon -Nutmeg -Ginger -Rosemary -Sea salt -Black pepper

STEP 1

First, preheat oven to 400 F. Peel and slice the potatoes into very thin rounds and place them in a prepared baking dish. 

STEP 2

Now, saute butter and garlic in a medium saucepan until fragrant. Whisk in flour and then stir in the cheese, milk, cream, and seasonings. 

STEP 3

Let it come to a soft boil. Then, remove it from the heat and stir in the shredded mozzarella and cheddar cheeses. 

STEP 4

Last, pour the cheese sauce on top of the potato slices. Cover and bake for 30 to 35 minutes. Remove foil and bake for another 8 to 10 minutes. Garnish and serve.
