Here's What You Need

For this recipe, you need: -Fresh raspberries -Ricotta cheese -Milk -Lemon zest and juice -Vanilla extract -Large egg -Granulated white sugar -Unsalted butter -All-purpose flour -Baking powder -Salt -Powdered sugar  For the topping: -Melted butter -Brown sugar -Lemon zest and juice -Raspberries

STEP 1

First, preheat oven and prep the pan. Then, whisk all topping ingredients except the raspberries in a medium bowl. 

STEP 2

Now, spread the topping mixture into the bottom of the pan and top with raspberries to cover the whole bottom of the pan. 

STEP 3

Next, mix dry ingredients in a large bowl and set aside. Then, beat the lemon zest, juice, vanilla, egg, sugar, and butter with an electric mixer in a large bowl.

STEP 4

After, pour the wet ingredients into the dry ingredients and continue to beat until it is combined. It should look crumby. 

STEP 5

Then, mix in the ricotta and 1/2 cup of milk. Beat just until incorporated before folding in the raspberries gently. Level the top with an offset spatula. 

STEP 6

Finally, bake for 35 to 45 minutes. Remove and let cool for 10 minutes before taking off the ring. Sprinkle with powdered sugar and slice to serve.
