Carrot Oatmeal Cookies

Instead of the same oatmeal cookies you always make, add fresh carrots and chocolate chips for a new family favorite. 

Here's What You Need

For this recipe you need: -Old-fashioned whole rolled oats -Chocolate chips -Shredded carrots -Chopped walnuts -Raisins -Unsalted butter -Brown sugar -Granulated sugar -Large eggs -Pure vanilla extract -All-purpose flour -Unsulphured molasses -Baking soda -Ground cinnamon -Salt

STEP 1

First, cream the butter and both sugars with a stand mixer until smooth. Scrape the sides and bottom of the bowl.

STEP 2

Next, add the eggs and mix on high speed for about 1 minute, until it is well combined. Scrape the bowl again as needed.

STEP 3

Then, add the molasses and vanilla extract and continue to mix on high until combined well. 

STEP 4

In another bowl, whisk the dry ingredients until well-mixed. Then, combine it all in one bowl. Beat on low until mixed.  

STEP 5 

After, beat in the walnuts, chocolate chips, carrots, raisins, and oats on low speed. It should be thick and sticky. Chill for one hour.  

STEP 6

Now, preheat oven to 350F and line your baking sheets. Then use a scoop to make dough balls. Place 2 inches apart on the baking sheets. 

STEP 7

Last, bake for 10 to 12 minutes or until the edges are lightly browned. Cool on a wire rack for 5 minutes before removing them from the baking sheets.
