For this recipe you need: -White chocolate chips -Pumpkin puree -Granulated sugar -Light brown sugar -Melted unsalted butter -Egg yolk -All-purpose flour -Vanilla extract -Cream of tartar -Ground cinnamon -Ground nutmeg -Baking powder -Salt For topping: -Granulated sugar -Ground cinnamon

STEP 1

First, beat both sugars and butter in a large bowl until creamy. Scrape the sides and bottom as needed. 

STEP 2

Next, add the vanilla extract, egg yolk, and pumpkin puree. Whisk to combine. 

STEP 3

Then, mix dry ingredients in a separate bowl. After, gradually add the dry ingredients into the wet ingredients. Beat on low until well combined. 

STEP 4

Now, fold in the chocolate chips, cover, and chill for at least one hour. Preheat oven to 350 F and prep cookie sheets with parchment paper. 

STEP 5

Mix topping ingredients in a small bowl and set aside. Then, roll dough into balls, coat with topping, and place them on the cookie sheets.  

STEP 6

Bake in the preheated oven for 10 to 12 minutes. Remove and let them cool completely on the cookie sheet before serving.
