For this recipe you need: -Beef chuck roast -Cubed pumpkin -Diced pineapple -Low sodium beef broth -Worcestershire sauce -Diced poblano peppers -Quartered red onion -Diced yellow onion -Minced garlic -Whole garlic -Vegetable oil

STEP 1

First, preheat oven to 325 F and place the seasoned roast in a Dutch oven over high heat. Sear on each side for 6 to 8 minutes and set aside. 

STEP 2

Now, saute onions for 3 to 4 minutes until brown. Then, add the garlic and pumpkin and saute for several more minutes. 

STEP 3

Next, add the rest of the ingredients and stir well. Then, put the beef roast back into the pot and add whole garlic, onion, and bay leaves. 

STEP 4

Last, cover and bake for 3 to 4 hours or until fork-tender. Discard bay leaves and serve shredded with veggies, cilantro, lime, and parsley.
