For this recipe you need: -Roasted shelled unsalted pistachios -Melted unsalted butter -Lime zest -Lime juice -Frozen spinach -Milk -Granulated sugar -Baking powder -All-purpose flour -Salt For the lime glaze: -Lime juice -Powdered sugar -Chopped salted pistachios

STEP 1

First, preheat oven to 350 degrees F and prep your loaf pan. Then, mix the pistachios, spinach, and milk in a food processor until smooth. 

STEP 2

Next, transfer the mixture to a large bowl and mix in the rest of the ingredients with a spatula until it is just combined. Do not overstir. 

STEP 3

Now, pour the batter into the prepared loaf pan and bake for 60 to 70 minutes or until a toothpick comes back clean. 

STEP 4

Meanwhile, mix the lime juice and sugar until smooth and chill until the cake is cool. Then, pour it on top of the cake, add chopped pistachios, and serve.
