Whether you are celebrating a birthday or just serving the family, this Pistachio Cheesecake is deliciously creamy, sweet, and just a bit salty. 

Here's What You Need

For this recipe you need: -Cream cheese -Granulated sugar -Pistachio butter -Large eggs -Pure vanilla extract -Sour cream -Fine sea salt -Finely zested lemon (optional) -Fresh raspberries (optional) For the crust: -Cookie crumbs -Ground pistachios -Melted butter -Powdered sugar -Fine sea salt

STEP 1

First, preheat the oven to 350 degrees F. Then, mix all the crust ingredients together in a large bowl until well combined.

STEP 2

Next, press the crumbs into the bottom and sides of an 8-inch springform pan lined with parchment paper. Then, bake for 10 minutes. 

STEP 3

Now, turn oven down to 325 degrees F and whisk the sugar, salt, and cream cheese until smooth. Scrape sides and add vanilla and pistachio butter, whisking well. 

STEP 4

After, add the sour cream and mix until combined. Then, add eggs, one at a time, mixing until they are just incorporated. 

STEP 5

Fold in the zest and raspberries. Then, pour into the crust and bake in a water bath for 50 to 70 minutes. Turn off oven and leave it open a crack for 30 minutes. Close for another 15 to 30 minutes. 

STEP 6

Finally, let cake chill in the fridge overnight. Then, serve garnished with whipped cream, chopped pistachios, and fresh raspberries.
