To make Pineapple Fried Rice, you will need: -Pineapple pieces -Day old jasmine rice -Sweet corn -Peas -Diced red bell pepper -Finely chopped green onions -Unsalted chopped roasted peanuts -Lime zest -Lime juice -Chopped cilantro -Red pepper flakes -Minced garlic cloves -Peanut oil

For the sauce, you will need: -Granulated sugar -Soy sauce -Mirin -Fish sauce -Oyster sauce

STEP 1

To begin, add the peanut oil to a non-stick skillet or wok over high heat. Once it is hot, add the pepper flakes and garlic. Cook for one minute, stirring constantly. 

STEP 2

Next, add the bell pepper and stir constantly while cooking for another minute. If you want the pineapple caramelized and soft, add it now as well. Then, add the corn and peas, stirring for another 30 seconds. 

STEP 3

Now, add the sauce ingredients and rice. Cook for 2 to 3 minutes, stirring constantly. Add pineapple (if you haven't already), lime juice, and zest and stir until warm. Add green onions and remove from heat. Serve with cilantro and peanuts on top.
