Here's What You Need

For this recipe, you need: -Shrimp -Pineapple chunks -Chopped peanuts -Red and green bell peppers -Minced garlic -Red chili pepper -Sliced yellow onion -Sliced carrots -Lime juice -Lime zest -Coconut milk -Cream of coconut -Curry paste -Yellow curry powder -Fresh cilantro -Olive oil -Grated ginger -Kosher salt

STEP 1

To begin, add oil to a deep skillet. Once it is hot, add the shrimp, season with salt, and cook until it is no longer pink. Set aside on a plate. 

STEP 2

Now, add the garlic, curry powder, and curry paste to the skillet and cook for about one minute, or until it is fragrant. 

Step 3

Then, add the vegetables and turn the heat down to medium. Cook for 10 minutes, stirring occasionally, until they are tender.

Step 4

Next, add the rest of the ingredients except the peanuts and stir as you bring it to a simmer. Turn the heat to medium low and cook for 20 to 30 minutes. 

Step 5

Last, stir in the shrimp and cook for several minutes, until it is hot. Serve with chopped peanuts and cilantro on rice.
