When you are craving cheesecake but want something different, this mouthwatering Pineapple Cheesecake is perfect. 

Here's What You Need

To make Pineapple Cheesecake, you need: -Full-fat cream cheese -Large eggs -Sour cream -White granulated sugar -Vanilla extract -Finely grated lime zest -Cornstarch -Salt For the pineapple topping: -Canned crushed pineapple -Lime -White granulated sugar -Cornstarch -Cold water -Whipped cream -Lime zest

STEP 1

For the crust, spray a springform pan with oil and set aside. Then, mix the cookie crumbs, sugar, butter, and nuts in a large bowl. Press this mixture into the bottom of the pan and one inch up on the sides. Bake for 10 minutes at 350 degrees F. 

STEP 2

While the crust cools, beat the cream cheese and sugar in a stand mixer until smooth. Then, add the vanilla, salt, lime zest, and sour cream and beat for 30 more seconds or until combined. 

Step 3

Pour the cream mixture on the cooled crust and bake for 55 to 65 minutes. The center should barely move when you shake the pan. Cool for 15 minutes on a wire rack and then loosen the edges with a knife. Cover and chill overnight. 

Step 4

To make the topping, heat the sugar and two tablespoons of water in a small saucepan until it boils. Cook for two minutes, stirring occasionally before adding the pineapple, lime juice, and zest. 

Step 5

Continue to cook the topping on medium heat for six minutes, stirring constantly. Once it has thickened enough, remove it from the heat and let it cool. Spread it over the cheesecake and serve with whipped cream and pineapples on top.
