How to make Pineapple Bread

Moist Pineapple bread is great for breakfast, snack or as a dessert. Just top it with ice cream, or some fluffy whipped cream and you have a great sweet treat. Pineapple bread is easy to make, and filled with juicy pieces of pineapple tidbits.

Here's What You Need

To make the Pineapple Bread with Pineapple Glaze you will need: 1/2 cup white granulated sugar 1/4 cup light brown sugar 1/2 cup unsalted butter (softened) 2 eggs 1 1/2 cups all-purpose flour 1/4 cup pineapple syrup (from the canned pineapple) 2 tablespoons heavy cream 1 cup crushed pineapple 1 teaspoon vanilla 1 teaspoon lime zest 1 teaspoon lime juice 1/4 teaspoon salt Glaze:  1 cup powdered sugar  1 teaspoon lime juice 2 tablespoons pineapple syrup

STEP 1

First, start by adding the butter and both sugar to a bowl. Whisk until fluffy.  After that, add the eggs one at a time to the mixture. Mixing each one until fully combined. In a separate bowl, mix the dry ingredients.

STEP 2

Next, add half of the flour mixture to the egg mixture and also the syrup, mix to combine. After that add the remaining four and milk and again mix to combine. After that, using a spatula fold in the pineapple, vanilla, zest and lime juice.  Gently stir the ingredients until fully combined.

STEP 3

Finally, scoop the bread butter into the prepared pan and bake it at 350 degrees for 45-55 minutes. The bread is ready when a toothpick inserted into the center of the bread comes out clean. Cool the cake on a wire rack. Mix the glaze ingredients in a bowl until smooth and spread onto the bread evenly.
