For the grilled pineapple: -Pineapple -Lime -Maple syrup For the dressing: -Full fat coconut milk -Pineapple juice -Balsamic vinegar -Avocado oil -Lime juice -Crushed red pepper flakes -Salt -Black pepper For the garnish: -Toasted coconut -Macadamia nuts -Fresh chopped basil

STEP 1

First, mix flour, salt, and pepper in a shallow bowl. In another bowl, beat the eggs. In a separate bowl, mix the coconut and lime. 

STEP 2

Next, dredge the chicken in flour, eggs, and coconut to coat. Then, transfer it to a parchment paper lined baking sheet and bake for 12 to 15 minutes. 

STEP 3

Now, slice pineapple and brush with lime and maple syrup mixture. Cut into chunks and cook on a hot grill for a few minutes on each side until charred.

STEP 4

After, mix the salad in a large bowl. Whisk the dressing ingredients and drizzle over salad before serving with coconut, chopped nuts, and basil.
