For this recipe, you need: -Chicken thighs -Large red onion -Grape tomatoes -Red bell pepper -Capers -Kalamata olives -Orange -Lemon -Rosemary sprigs -Salt -Black pepper

For the sauce:  -Large lemon -Large orange -Honey -Garlic powder -Onion powder -Minced garlic cloves -Olive oil -Salt For garnish: -Green olives -Red olives -Fresh rosemary sticks

STEP 1

First, prep the fruits and veggies and set them aside. Then, zest and juice the lemon and orange, adding it all to a medium bowl. 

STEP 2

Now, add the honey, onion powder, garlic powder, and olive oil to the bowl with the juice and zest. Whisk and add salt to taste.

STEP 3

Next, season the chicken with salt and pepper. Then, dip each piece into the sauce, shake off the excess, and put it onto a greased pan. Repeat with the rest of the chicken thighs.

STEP 4

After, add the veggies and fruits to the pan and drizzle the remaining sauce over the chicken. Top with rosemary and cover with foil. Bake for 20 minutes.

STEP 5

Remove the foil and bake for another 30 minutes, rotating pan after 15 minutes. Drain some of the juice and serve with olives and fresh rosemary.
