One Pan Creamy Corn Chicken is perfect for busy weeknights. With corn, peas, and cherry tomatoes, you have the whole meal ready to go in minutes. 

Here's What You Need

You need these ingredients for this Creamy Corn Chicken: -Chicken thighs -Chopped bacon slices -Unsalted butter -Garlic cloves -Medium onion -Cherry tomatoes -Sweet corn -Cooking cream -Chicken stock -Sweet peas -Baby rocket leaves -Extra virgin olive oil -Chopped fresh thyme -Chopped fresh basil

STEP 1

First, mash the butter, basil, thyme, and garlic in a smalll bowl and roll it into a log. Wrap in plastic wrap and chill until later. Then, heat oil in a big cast-iron pan and cook half the chicken with the skin side down until it is golden, about five minutes. 

STEP 2

Turn and cook for one more minute before transferring to a plate. Repeat with remaining chicken. Next, add the bacon and cook until it is crispy and golden, about three to five minutes. Add it to the plate of chicken. 

STEP 3

Then, strain all but two tablespoons of fat, reducing the heat to medium. Add the onion and cook for another five minutes or until soft. Add corn, chicken stock, cream, and cherry tomatoes. Stir until well combined.  

Step 4

Return chicken to the pan and stir in the bacon. When it simmers, turn it to medium-low and cook until it is cooked through, about 20 to 30 minutes. Add sweet peas in the last 10 minutes.
