One-Pan Chicken And Orzo

Here's What You Need

For this recipe, you need: -Bone-in chicken thighs with skin -Extra virgin olive oil -Chopped shallots -Unsalted butter -Dry orzo -Minced garlic -Capers -Dry white wine -Low-sodium chicken broth -Baby spinach -Crumbled feta -Heavy cream -Lemon zest and juice -Chopped parsley -Italian herbs -Dried basil -Salt and pepper

STEP 1

First, heat oil in a skillet. Add seasoned chicken, skin side down and cook for 8 to 10 minutes. Flip and cook for another two minutes. 

STEP 2

Next, remove chicken and reduce heat. Add butter and shallots. Cook for 4 minutes before adding the capers, orzo, garlic, herbs, basil, and salt. Toast for 2 to 3 minutes.

STEP 3

Now, add the wine and scrape the brown bits from the pan. Add broth and simmer until the liquid is slightly reduced, or about 5 minutes. 

STEP 4

After, add spinach and cream and cook until wilted. Then, place chicken back in the pan and bake for 15 to 20 minutes. Serve topped with feta, lemon juice, zest, and parsley.
