For this recipe you need: -Cream cheese -Powdered monkfruit sweetener -Large egg -Pure vanilla extract -Lemon juice For the crust: -Almond flour -Powdered monkfruit sweetener -Melted unsalted butter -Lemon zest -Cinnamon For the sauce:  -Raspberries -Monkfruit sweetener -Water

STEP 1

First, prepare pan and preheat oven to 350 F. Then, stir the crust ingredients in a medium bowl until combined.

STEP 2

Then, spoon a tablespoon of crust mixture into each muffin slot. Press it down firmly to make a crust. 

STEP 3

Next, beat cream cheese and powdered monkfruit until combined. Add egg, vanilla, and lemon juice. Beat until smooth and then spoon some into each slot.

STEP 4

After, pour water and raspberries into a small saucepan and cook while mashing the berries. 

STEP 5 

Add monkfruit and stir until smooth. After it cools, spoon 2 teaspoons onto each mini-cheesecake and swirl it around.  

STEP 6

Finally, bake for 15 minutes and cool on a wire rack. Then, chill in the fridge for a few hours before serving.
