Gather these ingredients for this recipe: -Corn kernels -Tortilla chips -Pepper Jack cheese -Mexican style cheese -Cotija cheese -Mayo -Sour cream -Minced and seeded jalapeno -Smoked paprika -Cumin -Chili powder -Kosher salt -Freshly ground black pepper -Fresh lime juice -Extra virgin olive oil

STEP 1

First, preheat the oven to 375 degrees F. Then, heat the olive oil in an ovenproof skillet on high heat. Add in the corn, paprika, chili powder, cumin, salt, and pepper. Cook for two minutes. 

STEP 2

Next, wipe out the pan with a paper towel and pour the corn into a large bowl. Add in one tablespoon of the lime juice and jalapeno, stirring to combine. 

Step 3

Then, stir the cotija cheese, mayo, sour cream, and the rest of the lime juice in a small bowl until mixed. Add salt and pepper to taste. 

Step 4

After, put one layer of chips in the skillet and top with cheese. Keep repeating until you have used all the chips and cheese. Then, bake in the oven for about five minutes, until the cheese is melty.

Step 5

Finally, add the corn mixture to the top of the chips and add the mayo dressing. Save some dressing for later. Garnish with cilantro, onion, and cheese before serving.
