For a unique salad with lots of flavor in every bite, this one is packed with veggies and cheese before being coated in garlic anchovy dressing.

To make this recipe, you need: -Feta cheese -Chopped lettuce -Chickpeas -Chopped red onion -Shredded carrot -Grape tomatoes -Diced English cucumber -Bell peppers -Cooked quinoa

For the dressing: -Minced garlic -Oregano -Chopped cilantro -Chopped parsley -Red wine vinegar -Fresh lemon juice -Olive oil -Capers -Anchovies -Kosher salt

STEP 1

First, roast the pepper on a grill, broiler, or on the stove. After, put it in a sealed container for 10 minutes. Then, peel, core, seed, and chop the pepper and put it in a large bowl. 

STEP 2

Next, oil the feta and grill it until it is lightly charred. Set aside to cool while you mix all the dressing ingredients in a bowl. Chill until ready to use.

Step 3

Now, add chickpeas, carrots, tomatoes, cucumbers, and quinoa to the large bowl with the peppers. Pour on the dressing and stir. 

Step 4

Next, put the lettuce on a plate or bowl and top it with the salad. Cut the feta cheese and arrange it on top before drizzling with the olive oil. Serve with lemon slices on the side.
