First, start by making the graham cracker crust. For that, mix the graham cookie crumbs with sugar and melted butter. After that, press the mixture into a pie dish or a springform pan. Next, chill the crust for a few minutes, while you work on the filling.
Next, to make the filling mix the Jell-o with the boiling water until fully dissolved. In the meantime, whisk the mascarpone until light and creamy and combine it with the cool whip. Once the Jell-O mixture has cooled, stir it into the whipped cream. Stir until fully combined.
Finally, stir the maraschino cherries into the creamy mixture. After that, scoop the filling into the chilled crust. Level the top and refrigerate the pie for at least few hours or overnight. When ready to serve it, garnish with whipped cream and more maraschino cherries.
