For a one-dish meal that is a perfect comfort food for fall, make this Lemon Chicken and Rice Casserole. Everyone will love it!

Here's What You Need

For this recipe you need: -Bone-in skin-on chicken thighs  -White basmati rice -Low-sodium chicken broth or stock -Lemon juice and zest -Mushroom soup -Melted unsalted butter -Paprika -Chopped parsley -Dried basil -Dried oregano -Kosher salt -Black pepper -Cooking spray

STEP 1

First, preheat the oven to 350 degrees F and add soup, juice, zest, broth, and rice to a prepared baking dish. Mix well. 

STEP 2

Now, place the chicken pieces on the rice and drizzle the melted butter on top. Season, cover, and bake for 1 1/2 hours.   

STEP 3

Next, remove foil and bake at 400 degrees F for 20 to 30 minutes. Broil for 3 to 5 minutes for extra crispy skin. Finally, serve with fresh parsley on top.
