Instant Pot Tuscan Chicken

This creamy delicious dish is perfect for any meal. All you need is chicken, sun-dried tomatoes, cream, herbs, and chicken stock.

Here's What You Need

For this recipe, you need: -Chicken thighs -Chicken stock -Cremini mushrooms -Sun-dried tomatoes -Heavy cream -Fresh spinach -Parmesan cheese -Minced garlic -Fresh basil -Unsalted butter -Garlic powder -Onion powder -Italian seasonings -Dried oregano -Dried basil For thickening: -Cornstarch -Water

First, set the instant pot to sauté and wait until it says HOT. Then, pat chicken dry and season with salt, pepper, onion, and garlic powder. 


Next, add 2 tablespoons of butter to the pot and put the chicken on top. Brown it for 2 to 4 minutes per side, until it is golden brown.

Then, add minced garlic and  sauté for 30 seconds while stirring. Add mushrooms, salt, and pepper and cook for 1 minute. Stir in the seasoning and sauté for another minute. 

Step 4

Now, pour in the chicken stock and soy sauce and scrape the bottom to deglaze. Put the chicken and juices back into the pot and seal the lid.

Step 5

Cook for 5 minutes and then natural release for 10 minutes. Remove the chicken and bring liquid to a boil on sauté. Add spinach and tomatoes and cook for 30 seconds. 

Step 6

Then, add heavy cream and cheese. Dissolve cornstarch in water and add it to the pot a little at a time to thicken. Put chicken back in and season to taste before serving.
