How to make Instant Pot Coconut Rice

Make perfect coconut rice using your Instant Pot. Jasmine rice is cooked in creamy coconut milk and flavored with a bit of fresh lime juice and lime zest!

Here's What You Need

To make the instant pot coconut rice you will need: – 1 cup Jasmine rice Coconut Milk Mixture: – 1/2 cup Thai unsweetened coconut milk – 3/4 cup chicken stock (unsalted or low sodium) – 1 teaspoon lime juice – 1 teaspoon lime zest – 1/2 teaspoon fine sea salt

STEP 1

First, you start with adding the rice to a rice colander and rinse it well under cold tap water. After that, make sure to drain it well. Once done, add it to the inner pot.

STEP 2

Next, make the coconut milk mixture, by mixing in a bowl the coconut milk, chicken stock, lime juice, and lime zest. Make sure to stir well. Also, for the coconut mixture I recommend you use Thai canned coconut milk. As it is much creamier. Pour the mixture into the Instant Pot and stir well to combine.

STEP 3

Finally, lock the lid and Pressure Cook the coconut rice for 5 minutes on high pressure. After that, do a 10 minute Natural Pressure Release, followed by a quick release. Carefully open the lid and fluff the rice.
