Homemade Garlic Confit and flavored Garlic Oil is made with perfectly roasted garlic, and fresh herbs. For extra flavor we have added thyme and rosemary sprigs. You can use the garlic as a spread, and the oil as a dip.

Here's What You Need

To make the Garlic Confit and Garlic Oil you will need: - a few heads of fresh garlic - a cup of good olive oil - fresh herbs, we have used rosemary and thyme. You can also use oregano, sage, and basil.

STEP 1

First, start by gathering your ingredients. After that, peel the garlic heads. Next, add the garlic cloves to a small baking dish and after that add the olive oil. Choose an olive oil that can be cooked at a high temperature.

STEP 2

Next, add the fresh herbs, and toss everything well, so all the ingredients are coated in the oil. Bake at 250 degrees F for about 2 hours. The garlic confit is done when the garlic cloves are very tender and have a golden brown color. Remove the baking dish from the oven and let it fully cool before transferring the garlic and oil mixture to a jar.

STEP 3

Finally, add the garlic cloves and oil to a jar and store it in the fridge for up to 2 weeks. You can use the tender garlic cloves as a spread, or to add extra flavor to meat. The oil is great for dipping, in salads, salad dressings or to brush on veggies and meat when grilling.
