STEP 1

To start, heat milk to 115 degrees F in a small saucepan or in a cup in the microwave. Pour in the yeast and stir until it dissolves. Let it sit for five to 10 minutes or until it is foamy. If it does not foam, get some fresh yeast and milk and try it again. 

STEP 2

Next, stir melted butter and vanilla in a small bowl. Then, use the dough hook in a stand mixer to mix the flour, cinnamon, light brown sugar, nutmeg, and salt. Slowly add the yeast mixture with the mixer running on low. Then, pour in the butter and beat in the eggs one at a time.

STEP 3

Add your carrots and increase the speed, mixing it until the dough pulls away from the sides. If it is still too sticky, add a little more flour one tablespoon at a time until it is a smooth ball. Put it in a greased bowl and cover with a clean towel. Let it rise for one hour until it has doubled in size.

Step 4

In the meantime, oil a 9x13 baking pan with baking spray or butter. Then, mix the cinnamon and brown sugar in a medium bowl. Set aside. Roll out your dough onto a clean counter until it is a 12x20-inch rectangle. Brush with melted butter and sprinkle with the cinnamon sugar. 

Step 5

Now, distribute the raisins evenly on top of the dough. Roll the dough into a log and pinch the ends. Slice the log into how many rolls you like. I did nine large ones. Arrange in the prepared pan and cover for another hour. 

Step 6

Preheat the oven to 350 degrees F and bake for 30 to 40 minutes. The internal temp should be at least 200 degrees F. Remove and let cool while you make the icing. 

Step 7

To make the icing, beat the cream cheese and butter until fluffy before adding the sugar, cinnamon, and vanilla. Add milk, one tablespoon at a time and then ice your rolls before serving.
