These flaky and buttery cookies have a thick sweet filling made with real figs and brown sugar and an oat and walnut topping. 

Here's What You Need

For the crust: -All-purpose flour -Granulated sugar -Softened butter -Vanilla extract For the filling: -Chopped dried Mission figs -Brown sugar -Granulated sugar -Boiling water For the topping: -All-purpose flour -Finely chopped walnuts -Quick cooking oats -Cold butter -Brown sugar

STEP 1

First, preheat oven and spray your pan. Then, use a mixer to beat 1/4 cup sugar, 1/2 cup butter, and vanilla on medium until combined well. 

STEP 2

Then, turn the mixer to low and beat in 1 cup flour until a soft dough forms. Press the dough into the bottom of your prepared pan and bake for 10 to 15 minutes. 

Step 3

Meanwhile, cook the filling ingredients in a medium saucepan over medium high heat for 5 to 10 minutes, stirring constantly. 

Step 4

The liquid should be gone and figs will be soft when it is done. After the crust is finished, let it cool for a few minutes before spreading on the filling.

Step 5

Now, mix the butter, brown sugar, and flour in a bowl with a pastry cutter. Then, stir in the oats and walnuts. 

Step 6

Last, sprinkle the topping on the filling and spread evenly. Bake 15 to 20 minutes until the edges are bubbly. Cool and serve.
