To make this Crunchy Bean Salad, you need: -Canned white beans -Cherry tomatoes -Sliced long English cucumber -Diced yellow bell pepper -Diced red bell pepper -Chopped red onion -Pitted and halved kalamata olives -Chopped parsley -Chopped dill -Freshly shaved parmesan cheese

Here's What You Need

For the dressing: -Greek yogurt -Mayonnaise -Honey -Apple cider vinegar -Lemon juice -Lemon zest -Minced garlic cloves -Kosher salt -Ground black pepper

STEP 1

To start, drain the juice from the beans and rinse them in a colander. Make sure you drain them well before you put them in a large bowl. 

STEP 2

Then, chop the cucumber, onion, bell peppers, kalamata olives, parsley, cherry tomatoes, and dill. Put them in the bowl with the beans and toss well before adding the parmesan cheese.   

STEP 3

Now, put all the dressing ingredients into a medium bowl and stir it well. Add the dressing to the salad and toss until it is all evenly coated. Serve with extra parmesan and herbs.
