All you need is a handful of basic ingredients for this Crispy Pork Loin including onions, carrots, garlic, celery, white wine, and olive oil. Then, it is seasoned with a special rub and topped with homemade gravy.

You will need these ingredients for this recipe: -Pork shoulder -Chopped carrots -Halved garlic bulb -Chopped celery stick -Olive oil For the rub: -Garlic powder -Ground mustard -Dried parsley -Dried basil -Dried oregano -Smoked paprika -Kosher salt -Black pepper For the gravy: -Chicken stock -Flour -Salt and pepper

STEP 1

Starting the day before, pat the meat dry and put it in a covered dish in the fridge overnight. The next day, preheat oven to 430 degrees F and remove the meat from the fridge. 

STEP 2

Pat the pork dry again before rubbing it all over with the oil.  Then, mix all the rub ingredients in a small bowl. Only use two tablespoons of salt, setting the rest aside for now. 

Step 3

Rub all of the seasoning mixture into the meat and drizzle the rest of the oil on it, rubbing it in well. Add the last two tablespoons of salt now, covering the whole thing. 

Step 4

Now, put the carrots, celery, onion, and garlic in the bottom of a roasting pan. Put the pork skin side up on the veggies and pour the wine into the pan. Do not pour it on the meat. 

Step 5

Lower the oven temp to 325  and roast for 2 1/2 hours. Check after 1 1/2 hours and add water if the pan is dry. Add oil and seasoning if needed. Then let it cook for another hour. Last, turn oven to 480 degrees F and roast for 30 minutes. 

Step 6

To make gravy, take 3 to 4 tablespoons of fat and put it in a saucepan. Pour the pan juices into a bowl. Heat the fat over medium-high heat and whisk in flour. Let it cook for one minute, pouring in the juice and stock until it is thick. Season before serving.
