Here's What You Need
For the toppings:-Salsa-Diced jalapeno-Chopped cilantro-Avocado-Tortilla chips-Lettuce-Diced green onions-Guacamole
First, add chicken to a large skillet with a tablespoon of hot oil. Season and cook for 5 minutes or until slightly browned.
Then, move chicken to a plate and discard the juices. Brown rice in oil while stirring constantly.
Next, add the seasonings, canned tomatoes, and beans. Stir until combined.
After, pour in the broth, give it a stir, and bring it to a boil. Then add chicken on top but DO NOT STIR.
Cover and cook for 20 to 22 minutes or until liquid is absorbed. Then, add cheese and let it melt before serving with your favorite toppings.
