For this recipe you need: -Olive oil -Diced chicken breasts -Long grain white rice -Black beans -Long-grain white rice -Low-sodium chicken broth -Mexican blend cheese -Chili powder -Taco seasoning -Onion powder -Garlic powder -Cumin -Salt -Pepper

Here's What You Need

For the toppings: -Salsa -Diced jalapeno -Chopped cilantro -Avocado -Tortilla chips -Lettuce -Diced green onions -Guacamole

STEP 1

First, add chicken to a large skillet with a tablespoon of hot oil. Season and cook for 5 minutes or until slightly browned. 

STEP 2

Then, move chicken to a plate and discard the juices. Brown rice in oil while stirring constantly. 

STEP 3

Next, add the seasonings, canned tomatoes, and beans. Stir until combined. 

STEP 4

After, pour in the broth, give it a stir, and bring it to a boil. Then add chicken on top but DO NOT STIR. 

STEP 5

Cover and cook for 20 to 22 minutes or until liquid is absorbed. Then, add cheese and let it melt before serving with your favorite toppings.
