Chicken Bacon Ranch Casserole with Potatoes

Anything with bacon and ranch is yummy but this casserole also has tender chicken, melted cheese, and baby potatoes for a whole meal. 

Here's What You Need

To make this delicious dish, you need: -Boneless, skinless chicken breasts -Yukon gold potatoes -Diced green onions -Cheddar cheese -Pepper jack cheese -Creamy ranch dressing -Crispy bacon crumbles -Minced garlic cloves -Smoked paprika -Kosher salt -Black pepper

STEP 1

Preheat oven to 450 degrees F and grease a large casserole dish with olive oil or cooking spray. Then, peel the potatoes before washing them and cutting them into chunks. Dry with paper towels. 

STEP 2

Mix the potatoes with 1/4 cup ranch dressing, garlic, paprika, salt, and pepper. Stir until the potatoes are evenly coated and then put them in the casserole dish in an even layer. Bake for 30 minutes, stirring after 15. 

Step 3

Next, mix the rest of the dressing with the chicken and let it marinate while the potatoes cook. After the potatoes are done, add chicken on top and cover with foil. Bake for another 20 minutes until the chicken is cooked through.

Step 4

Remove the casserole and stir before topping with green onions, bacon, and cheese. Let it cook for another 10 minutes until the cheese is bubbly and melted. Garnish with sour cream and green onions before serving.
