Here's What You Need

To make the Best Carrot Cake, you need: -All-purpose flour -Large eggs -Granulated sugar -Buttermilk -Vegetable oil -White distilled vinegar -Vanilla extract -Chopped walnuts -Shredded carrots -Raisins -Cinnamon -Nutmeg -Salt -Baking soda -Baking powder -Baking spray -Cream cheese frosting

STEP 1

To begin, coat two 8-inch cake pans with non-stick spray. Add parchment paper to the bottom of each one and spray again. Now, whisk together dry ingredients in a medium bowl. Then, beat wet ingredients in a large bowl on medium speed until combined. 

STEP 2

Next, turn your mixer to low and add the dry ingredients a little at a time. Stop a few times to scrape the sides and bottom of the bowl. After, stir in the carrots, nuts, and raisins before pouring the batter into the prepared pans.

Step 3

Bake for 25 to 30 minutes, rotating halfway through. Then, remove and loosen the edges before letting them cool for 20 to 30 minutes. After, flip them out of the pans onto plates and then turn them back over on a wire rack to cool completely.

Step 4

After, use a serrated knife to make the cakes flat. Then, spread a bit of frosting on the cake stand before putting one cake on top. Frost the top before adding the other layer. Repeat and cover the whole cake in frosting. Refrigerate for at least two hours before serving.
