To make Carrot Cake Coffee Cake, you need: For the topping: -Orange zest -Nutmeg -Cinnamon -Light brown sugar -Salt -Unsalted butter -All-purpose flour For the carrot cake: -Finely grated carrots -Plain yogurt -All-purpose flour -Raisins -Vanilla extract -Large egg (room temperature)

-Granulated sugar -Brown sugar -Unsalted butter -Nutmeg -Cinnamon -Salt -Baking powder For the cream cheese layer: -Cream cheese (room temperature) -Granulated sugar -Large egg -Vanilla extract

STEP 1

Starting with the topping, whisk all the dry ingredients in a large bowl and then use a pastry cutter to mix in the butter.  You need small pea-size crumbles. For the cream cheese layer, beat all the ingredients except the egg until smooth. Then add the egg and mix. 

STEP 2

For the carrot cake, whisk the dry ingredients in a medium bowl and set it aside. Cream the sugars and butter until smooth. Add the egg and vanilla and mix thoroughly. Then, alternate adding the dry mixture and yogurt to the butter and sugars until it is all mixed well.

Step 3

Next, add the raisins and carrots before spreading the batter in a prepared pan. Gently spread the cream cheese layer on top and then add the topping.  Lastly, bake for 50 to 60 minutes and let it cool before serving.
