All you need for this recipe is:-Unwaxed citrus fruits (we used oranges and lemons)-Granulated sugar-Dark chocolate (optional)-Sea salt (optional)
First, wash the fruits under warm water and slice each one into eight wedges. Remove the flesh, leaving 1/4-inch of peel and pith.
Next, cut each of the wedge peels into three or four strips, depending on how big they are.
Now, add peel to a pot and cover with cold water. Once it boils, reduce heat and simmer 5 minutes. Drain, add fresh water, and simmer for another 30 minutes.
After, drain peel and add sugar. Heat on medium-low, stirring until the sugar dissolves. Add peel back to the pot and simmer for 30 minutes, until the peel is soft and translucent.
Then, remove from heat and let it cool before removing peels to dry. Bake for 30 to 40 minutes at 175F. Then, sprinkle sugar on parchment paper and toss the peel in the sugar. Let it dry for one hour before serving.
