All you need to make scrumptious scones is flour, eggs, sugar, butter, milk, and a few other basic ingredients. No yeast or proofing is needed.

STEP 1

To begin, preheat oven to 400 degrees F and line baking sheets with parchment. Next, add the baking powder, sugar, and flour to a large bowl and mix until combined. Then, cut in the cold butter until it looks like sand. 

STEP 2

Now, in a different bowl, whisk the milk, eggs, and lemon juice together. Pour these ingredients into the dry ingredients and stir until the dough forms. Using your hands, make it into a smooth ball. 

STEP 3

Now, roll out the dough on a floured surface and use a round cookie cutter to make 2 1/4-inch circles. Dip the cutter in flour before each one. Then, reroll the leftover dough and cut a few more. 

STEP 4

Place the scones onto the baking sheets and whisk together the water and egg. Brush the tops with the egg wash and then sprinkle a bit of sugar on top. Let them rest for 15 minutes. 

STEP 5

Finally, bake for 14 to 15 minutes or until they are lightly golden brown on top. Move them to a wire rack to cool before serving warm with butter, cream, and fruit spread.
