How to Make a Bunny Butt Cake

For this Bunny Butt Cake, you will need the following: For the cake: -All-purpose flour -Buttermilk -Lemon zest and juice -Large eggs -Coconut oil -White granulated sugar -Baking soda -Baking powder -Salt For the frosting:  -Softened cream cheese -Powdered sugar -Vanilla extract For garnish: -Shredded coconut -Blueberries -Strawberry

STEP 1

You will need to line three muffin cups with liners and oil a 9-inch cake pan first. Then, use a whisk to mix baking powder, baking soda, salt, and flour in a large bowl. In another bowl, beat coconut oil and granulated sugar until creamy. 

STEP 2

Beat on low speed while adding eggs one at a time. Then, add the lemon juice and zest, beating on medium-low until mixed. Pour the dry ingredients and buttercream into the mixture, alternating as you go. 

Step 3

Fill the muffin cups halfway and then pour the rest of the batter into the cake pan. Put the cake on the center rack in your oven with the cupcakes on the top rack. Bake cupcakes for 20 minutes and cake for 30 minutes. Let them cool completely before frosting.

Step 4

To make the frosting, beat all ingredients until smooth. Cut the cake in half vertically. Then, frost the top of one half and put the other half on top with the layers upright and the cut end down. Attach one cupcake to the top middle of the cake for a tail. 

Step 5

Stick the other two cupcakes in front on bottom for the paws using toothpicks. Frost the tail and paws and cover in coconut. Use one slice of strawberry and three blueberries on each paw . Then, chill for two or three hours before serving.
