To make a Carrot Cake Cheese Ball, you need: -Medium carrots (peeled) -Coconut flakes -Chopped pecans -Raisins -Pineapple -Cream cheese -Honey -Vanilla extract -Nutmeg -Cinnamon -Salt -Carrot greens or parsley stem for garnish

STEP 1

First, beat cream cheese, honey, vanilla, and spices in a large bowl with your mixer on medium speed. Stir in one cup of shredded carrots, pineapples, and raisins. 

STEP 2

Next, spray a large sheet of plastic wrap with oil and spoon the cheese mixture into the middle of it. Form a ball using the plastic wrap to help so you do not get your hands dirty.

Step 3

Refrigerate the ball for at least two hours but overnight is perfect. When ready to serve, mix the rest of the carrots, coconut, and pecans in a bowl. Make the cheese ball into a carrot shape and cover with the coconut mixture before serving.
