To make this Deviled Egg Potato Salad, here is what you need. For the salad: -Eggs -Russet potatoes -Celery -Red onions -Green onions For the dressing: -Mayonnaise -Dijon mustard -Yellow mustard -Stone-ground mustard -Pickle relish -Salt and pepper

STEP 1

Put eggs in a large pot of water on medium-high heat. Once they boil, cover and remove the pot from the heat. Let them sit for 15 minutes before putting them in a bowl of ice water. 

STEP 2

Next, boil the cubed potatoes in another large pot for 15 to 20 minutes, until tender. Do not overcook! Drain and set aside.

STEP 3

Cut eggs in half and remove yolks, placing them in a bowl. Add mayo, mustards, relish, salt, and pepper and mash thoroughly. Chop egg whites and put them in a large bowl. Add the potatoes, celery, red onion, and green onions before mixing in the dressing.
