Boiled potatoes are buttery and delicious made with fresh herbs and drizzled with melted butter and a touch of fragrant olive oil. The insides have a nice creamy texture while the skin is soft and flavorful. This is my favorite way to cook taters and an easy side dish for any dinner.

Step 1

Add the potatoes to a large pot of salted water. Then add 1 tablespoon of salt and the rosemary. Bring to a boil over medium-high heat, then reduce heat to low-medium, and simmer until the potatoes are fork-tender. This may take 10-20 minutes, depending on the size of the potatoes, check the blog post for details.

Step 2

Once done cooking, drain and add the potatoes back to the pot or to a mixing bowl. Drizzle with melted butter and olive oil. Season with salt and black pepper to taste. Garnish with freshly chopped herbs and toss to combine.
