Colder weather, shorter days, and colorful leaves – that can only mean one thing. Autumn is finally here! For many of us, it’s also a season for rich and flavorful comfort food, which can warm not only our bellies but hearts as well.

This year we have prepared many vegetarian options for you to choose from – check them out and try your own luck in the kitchen!

1. Classic Potato Salad Recipe 

This recipe is a true classic you can serve at any occasion. It’s super quick to make, and it pairs really well with practically any other dish! Of course, you’ll need some potatoes – our star ingredient – which you will peel and cut into small cubes.

After boiling the potatoes, you need to sprinkle them with apple cider vinegar, which will add a zesty flavor. Other ingredients include eggs, onions, celery, pickle, fresh dill, and your favorite spices. The vital part of the Potato Salad is the creamy dressing, which perfectly counterbalances all of the components and textures. If you want to make sure all the flavors are adequately combined, then prepare the salad the day before serving it. 

2. Instant Pot Carrot Cake Cheesecake

Carrot Cake is one of the most comforting desserts of all time, but this recipe combines it with cheesecake as well, creating a true winning mix! First, you’ll need to make a carrot cake batter. Then, prepare cream cheese batter, and finally, layer both mixtures in the pressure cooker.

Remember that preparing this dessert in an instant pot, instead of a traditional oven, will allow you to save quite a lot of time and create this mouthwatering and smooth dessert. After it’s done, top the cake with cream cheese frosting and add caramel glaze as well. Ready to serve and eat!

3. Cheesy Broccoli Casserole Recipe

Casseroles are one of the best examples of delicious comfort food, especially during fall time. Our favorite one includes a yummy version with cheese and broccoli. In this recipe, you can use some of your favorite cheeses such as mozzarella, cheddar, parmesan, Gruyere, Monterey Jack, or Fontina.

Mix it with other ingredients for the Cheese Sauce, which include butter, flour, milk, cream, paprika, as well as salt, and pepper. Of course, this rich and creamy meal is a great way of incorporating broccoli into the diet of your family.

You may also choose to use cauliflower or baby carrots instead, whatever’s in your kitchen at that time. 

4. Banana Pancakes 

One of the best ways of starting a great day is through a yummy breakfast. In the fall, we cannot skip preparing our favorite fluffy Banana Pancakes. This is a really easy recipe that doesn’t take much time, so it’s no problem making it from scratch in the morning.

And what is important – you can use overripe bananas with a brown peel. First, prepare the dry ingredients, then the wet ones, and finally, combine both. Be careful not to overmix the batter, or the pancakes will not be as fluffy as we would like.

Of course, Banana Pancakes can be topped with your favorite ingredients such as fresh fruit, jam, honey, maple syrup, or whipped cream. You can serve them with other yummy breakfast meals such as hash browns or crispy bacon.

5. Italian Tomato Bruschetta

Italian kitchen provides us with dozens of comforting dishes, which are perfect for the fall weather. One of them is this delicious Tomato Bruschetta. The recipe is quite simple, but the perfect combination of flavors, colors, and textures makes it a true favorite.

All you need for this appetizer is ciabatta or sourdough, tomatoes, herbs, olive oil, and some of your favorite seasonings. Grill the bread with olive oil until it gets crunchy. Then, add the toppings, and sprinkle it with balsamic reduction.

Make sure to eat  Tomato Bruschetta right away – if you leave it for too long, the bread will absorb the moisture from the toppings and turn soggy.  

6. Creamy Tomato Bisque Recipe

A list of our veggie autumn comfort food wouldn’t be complete without some smooth and delicious soup. One of the best candidates is Creamy Tomato Bisque, which can be served as a standalone or with some other dishes.

For this recipe, we recommend Cherry or Roma tomatoes – both kinds are known for their juiciness and sweet taste. Other ingredients for this dish include veggie broth, bell pepper, onion, celery, garlic, heavy cream, and spices such as paprika, dried basil, salt, and pepper.

You can serve the dish when you make it or, of course, refrigerate or freeze the bisque for some other time.
